The Rossignol family has been crafting wines in Burgundy for generations, with a strong focus on the Côte de Beaune and classic villages such as Pommard. Their approach blends respect for traditional Burgundian winemaking with attentive vineyard work, often favouring older vines, careful soil management and minimal intervention to showcase each site’s unique expression. The estate prioritises balance, terroir clarity and food-friendly structure in its reds. A deep garnet core with a hint of brick at the rim. The 2019 Pommard opens with aromas of dark cherry, blackcurrant and wild strawberry, layered with warm spice, forest floor and a touch of leather. On the palate: concentrated red and dark fruit framed by structured yet fine tannins, building savory complexity with notes of earthy truffle, clove and subtle graphite minerality. Bright acidity keeps the medium body poised, leading to a lingering finish with gentle spice and refined length. A serious, age-worthy Pommard that pairs beautifully with roast beef, game birds or mushroom-based dishes.
